1) from my experience with secondary students I think that they still need a guide for writing, and even more if they have to take any of the official exams to get a certificate in which the correction of the compositions seems to be quite patterned.
2)it's true that depending on the students we have in front of us we can tend more to teach a proces approach mainly if the student is a child, or learns English not for academic purposes, but again, my opinion is that with learners that are preparing for any test it is more convenient to follow a patterned writing.
