1- personally in my lessons i try as much as possible to perform all of these activities in order to change or break the pattern to avoid repetition and usual routine that is going on in the class room , also these types of activities teach and train students to speak in all kinds of situations whether they were formal situations like debate or informal situations like a simple chat.

some activities really don't need any prior planning like chat , it just flows talking about random topics , as for other activities like debate or role play they actually need some steps to go over before performing like choosing a topic , give students time to prepare , give them space to engage themselves with the topic , and motivate them to speak and express.

2- when we do the activities in the class some obstacles are expected like: students make a lot of mistakes , her we should focus on the topic in general , is the student delivering the idea despite of his mistakes or he is being way off track, some mistakes can be corrected later with many ways like feedback or making a small move indicating the error but without interruption directly.
another problem that you will notice that not all students participate , well , this can be because of two reasons , one : they have no idea about the topic, two: they are not interested, in this case i will ask them what interesting topic they would like to talk about and maybe set up a different groups talking about interesting common topics.
also we might see some students use their mother language to communicate more than using English, although it might seem harsh but i usually stop listening to this type of students until they change to English ,, this is probably not because they don't know but because they get little shy about speaking in English and being afraid of making mistakes.
