I think dolphins did´t directly helped Nikki to speak. My theory about what did happends there is that for Nikki, beeing with the dolphins was an exciting experience, so that inspired him to do something he coudn´t do at the time (to speak in this case).
So, dolphins helped him to speak but i think that any other animal that can be as interesting as the dolphins coud help him in the same way as dolphins did.
